31 Days to Become a Better Writer - Day 12

Today's Challenge:
Make a list of ten of your passions. Pick one and write about why that topic/subject is your passion. We want to know the nitty gritty whys and hows. Maybe your love for war reenactments stems from your father taking you to battlefields and forts when you were younger or perhaps your pottery obsession is from a desire to understand the verse, “You are the potter and I am the clay...” Whatever your passion, for whatever reason you pursue it, we want to hear about it.


If you've been a reader here for long, you probably could name ten of my passions. LOL! Just in case you can't, here we go:
1. PINK (seriously, anything the color pink has me at hello)

I had already planned to write a post today about passion #5 - fibromyalgia/chronic illness/invisible illness/disability and then when I read the assignment for the Better Writer challenge, I realized that my planned post totally fit the bill.


I read this blog post a few weeks ago and knew I wanted to respond. I just wasn't sure exactly what my response was going to look like. For those who don't want to read the entire blog post I cited above, in short, a woman with a chronic invisible illness was going into a store and used the handicap accessible door. A woman in a wheelchair about ten feet away went off on her and yelled that she wasn't handicapped and couldn't use that *&%^ing door. The first woman approached the second and informed her that she did have a disability, however, it is an invisible one. She proceeded to tell her that she was allowed to use whichever door she wanted and that she was not in the way or stopping this other woman from using that door. The second woman continued screaming profanity and pitching a fit as the first woman walked away. The blog post continues as she reflects on the need to support each other and stand up for each other whether our disease is invisible or not.

I have to admit, if this had happened to me, my temper would probably have gotten the better of me and I probably would have said some things I shouldn't have. And then my mind jumps to those times when I've seen someone park in a handicap parking space and then jump right out of the car and run in the store. In those moments, I have instantly made the assumption that they aren't handicapped and how dare they park in those spaces. The truth is, I am in the wrong in those moments. I don't know if they are handicapped or not. Who am I to judge?

As my fibromyalgia has gotten worse and has gone from true invisibility to a bit more visible as I use my cane or wheelchair, I have begun to experience a new type of invisibility. Shopping using a scooter (the only way I can shop) is one of the most miserable errands I have to do. Why? Because most people pay no attention to what is going on around them. I have been run into by shopping carts more times than I can count. Many times the aisles are so narrow, it is like running a gauntlet to try to get through. Those scooters have a horrific turning radius so when I go to turn down the next aisle, invariably I am run into head on by a cart or suddenly I am in someone's way. 9 times out of 10, by the time we are finished in the store, I am so angry that I want to yell at someone or so emotionally beaten that I am in tears.

All of these events and reflections lead me to some questions. When did it become acceptable not to have common courtesy for each other? And why do many with visible illnesses or those with no illnesses think it's ok to bash (verbally, emotionally, and sometimes physically) those with invisible illnesses? How can we change this? How can we encourage and respect and support each other? How can we have compassion for each other? How can we make a difference today?

Lent and Ash Wednesday



Am I the only one who feels like Lent came early this year? It feels like we JUST celebrated Christmas and the New Year and now it's already time for Lent. I suppose it's feeling this way because of the move and transition we're going through.

I did not grow up practicing Lent. In fact, I'd never heard of Lent to my recollection until we came to Abilene in 2007. It was then that I was introduced to the lectionary and the church calendar. It's only been a few years for me so I am truly still a babe in this part of my journey. I've been very pleased to see so much writing in the blogosphere this year about Lent. I wanted to share some of these amazing reads with you:

What does Lent look like for me this year? This year will be different than any of the other Lenten seasons I've journeyed through.

First, I am working to make my gluten free diet more consistent. With the move and such, I've not behaved very well and my body is paying for it.

Second, I am praying the daily offices (morning prayers, midday prayers, evening prayers, and nighttime prayers) using an amazing book, Common Prayer: A Liturgy for Ordinary Radicals.

Third, we began our Lenten journey this evening by participating in the Ash Wednesday service at Episcopal Church of the Heavenly Rest. We'll continue journeying with them the next 5 Wednesdays in Evensong, a choral service of Evening Prayer. Each week will feature the works of important writers including George MacDonald, Dorothy Sayers, J.R.R. Tolkien, T.S. Eliot, and C.S. Lewis.

You've got to love after holiday sales. Went to Target today & got a couple of cute things for 70% off! Wahoo!

It's really hard to move in the rain. So grateful for amazing friends who helped even though it was pouring rain!

I'm so in love with Chick-Fil-A's new grilled chicken nuggets!!! I think it's wonderful that more restaurants are offering gluten free options.

Figure this one out: when the to post office to get a p.o. box and was told we couldn't get one because we didn't have proof of local address. Now, if I had a local address, what would the probability be that I would want to get a p.o. box for personal use? Strangeness!!!!!!

Cooking With C.C. ~ Gluten Free Maple Blueberry Doughnuts with a LemonGlaze

It's time for the 12th installment of Cooking with C.C. Katie, Damaris, and I made this recipe on Monday - our last time to cook together before we move back to Texas. I wanted to bake something we hadn't tried before so when I found this recipe for doughnuts, I knew we had to try it.


First, gather all your ingredients.


In a large bowl, combine 1 3/4 cups all-purpose gluten free flour,


3/4 teaspoon xanthan gum,


1 1/2 teaspoons baking powder,


1/4 teaspoon baking soda,


1/4 teaspoon cream of tartar,


1/4 teaspoon salt,


and 1/2 teaspoon nutmeg.


Stir to combine.


Slice 1 cup of frozen blueberries in half in a small bowl.


Add 1 tablespoon of the dry ingredients and stir to coat the blueberries.


In a saucepan, combine 1/2 cup maple syrup,


4 tablespoons unsalted butter,


and 4 tablespoons vegetable shortening.


Heat over medium-high flame stirring frequently until butter and shortening have melted and the syrup is simmering.


Remove from heat and stir in 3/4 cup plain yogurt (room temperature).


Make a well in the dry ingredients and pour the syrup mixture into the well. Stir to combine.


In a separate bowl, beat 2 eggs.


Stir beaten eggs into other ingredients.


Add the coated blueberries and fold them into the batter until evenly distributed.


We didn't have doughnut pans, so we made these in muffin pans. Spray the muffin pans with cooking spray. Fill the muffin tins until 3/4 of the way full.


Preheat oven to 350*. Place muffin pans into oven.


Bake until doughnuts spring back quickly when lightly pressed. That was about 13-14 minutes for us. Remove from oven and cool doughnuts in their pans for 10 minutes.


Remove doughnuts from pans to cooling rack.


In a bowl, combine 1 cup powdered sugar


and the juice of 1 lemon.


Stir until mixture goes from paste to thick glaze (add more lemon juice as necessary).


After completely cooled, dip each doughnut in glaze mixture.


Place onto wax paper until glaze is set.

Damaris insisted that these could not be called doughnuts since they were actually muffins, so she coined them "duffins, copyright Damaris Almon 2012" (her words exactly). These had a really rich flavor. They tasted really good right after the glaze set. However, I saved one to eat later and the glaze and gotten runny and it seemed to me that the "duffins" were too moist. So, I'd say make them and eat them immediately!

One of my favorite restaurants just moved to the top of my list as of yesterday. Why you ask? Because of this news - they are offering a healthy choice of grilled chicken nuggets in their kid's meals which also means they are gluten free!!!!!!!!!!!!! My only sadness comes from the fact that the closest Chick-Fil-A is not anywhere nearby. However, if, nay, when!, we move back to Texas, we will be frequent visitors. And how can you not love their cows!
